Sometimes we need to make the old and mundane, the old tired but true, a little bit more exciting. I’m all about making my meals more intriguing. Something to get excited about.
I know how easy it is to get stuck in a rut and eat the same thing day in and day out, week after week. Now is the time to take steps to change that. Make it healthier, more thrilling to dig into. Out with the boring, in with more flavor and texture.
Let’s start with breakfast, let’s start with oatmeal. Do you know how many ways there are to fix oatmeal? Lots. Baked Oatmeal, Raw Oatmeal in a Jar, Overnight oatmeal, just to name a few. Growing up oatmeal was served with brown sugar. That’s about it. Isn’t it funny how we seem to make things the same way as they were fixed for us growing up. It’s time to break out of that mold. First eighty-six the brown sugar (in restaurant talk that means take it off the menu).
Add some crunch, when I add crunch it sure helps me feel like I’m not missing out on anything. Sweet, who needs white or brown processed sugar? This isn’t complicated, sometimes old dogs just need to be taught new tricks.
Ingredients
- 1/2 cup of gluten free oatmeal
- 1 cup of coconut milk or water
- 1/4 tsp cinnamon
- 1/2 Tbs ground flax
- 1 tsp shredded organic coconut (don't use the non- organic kind) have you looked what's in it?
- 1/4 cup broken up walnuts
- 1/2 cup blueberries, fresh or frozen
Instructions
- In small saucepan stir together milk, oats, and cinnamon.
- Cook over medium heat for 10 minutes, stirring occasionally.
- Pour into bowl, stir in 1/2 the walnuts.
- Top with blueberries, coconut, and rest of walnuts.
