Almond Butter Oat Raisin Cookies, now that’s a mouth full isn’t it? Well let me tell you, this past week when I made these my mouth was full far too often with these sweet little nuggets. They are amazingly yummy and it’s really hard to stop at just one. Especially with all the stress that’s been going on around here.
If you haven’t heard already The Unprocessed Home is moving and if that isn’t stress enough well throw in finishing up at the job you have held for the past 20 years, packing, and getting the house up for sale. Oh and let’s not forget that big ol garage sale we had a few weeks back, I really like going to garage sales, and finding that awesome low-priced treasure, but having one and having to handle the people who like to chew you down on your already low price, well that’s not really my cup of tea.
Selling the house is rather tedious too. My house is fairly in order most of the time, (because Mr. TUH is a cleanie and I’m the messie). However until you have to keep it in super-duper order every single day, waiting for that special someone who may or may not decide they want to see your house that is for sale, this can get old pretty fast too. Okay, thanks for letting me air some of my stress.
Have you ever heard of the trick of baking a batch of cookies right before someone is coming to see your house? It smells wonderful and you hope their nose is going to make them buy your house and offer you even more than the listed price just because your cookies smell out of this world good. Right? I guess that’s just some wishful thinking. However it’s really not a bad idea, makes it feel a little more homey. Just make sure you allow enough time to clean up the mess before they get there. Wouldn’t that be a disaster if they showed up early and your sink was piled high with dishes. This last week when I did do this the joke was on me, about a half hour after baking the cookies, the people coming to look at the house canceled. So you can see why a few more of these cookies ended up in my stomach than needed to.
These Almond Butter Oat Raisin Cookies are gluten and dairy free. If you haven’t already made my Almond Cashew Butter, which is part of this recipe, then now is a good time. Almond Butter Oat Raisin Cookies are Mr. TUH’s favorite, they don’t last long in this house. Even if your house isn’t up for sale, there’s never a bad time to bake cookies. Ingredients
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon sea salt
- 1/2 cup almond meal
- 2 cups oats
- 2 eggs
- 1 teaspoon vanilla
- 3/4 cup of coconut oil
- 3/4 cup almond cashew butter
- 1 cup of coconut sugar
- 1/2 cup raisins
Instructions
- Preheat oven to 350 degrees.
- In stand mixer combine baking powder, baking soda, cinnamon, nutmeg, sea salt, almond meal and oats.
- Mix together.
- In separate medium bowl combine the wet ingredients and coconut sugar.
- Add wet ingredients to dry ingredients in stand mixer and mix.
- Add raisins.
- Scoop onto parchment covered cookie sheet.
- Bake for 10-12 minutes.
