Banana Chocolate Muffins! Need I say more?
Do you ever bite into something you made and it instantly reminds you of something or someone in your past.
Like many years ago biting into tuna salad made with black pepper makes me think of my mom’s tuna casserole, but if it doesn’t have the black pepper, it makes me think of the tuna sandwiches she used to take me out for at the diner at the department store of all things. Ok I might be dating myself with that.
Well when I took my first bite of these Banana Chocolate Muffins and the walnuts and chocolate chips inside, it reminded me of my Grandma Z. The walnut and chocolate chips in her chocolate chip cookies, made them famous. Of course her cookie bin was the first thing we headed for when we arrived at her house. Unfortunately she kept her cookies in a tin cookie bin, which made sneaking some impossible; she could hear the clank of the metal lid even when she was out in the living room watching her soap operas. Ah memories, make them while you can each and every day.

Ingredients
- 2 cups gluten free flour mix
- 2 Tbs. cocao powder
- ½ cup gluten free oats
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbs. cinnamon
- 3 ripe bananas mashed
- 1 flax egg, add 1 Tbs. ground flax and 3 tbsp. hot water, let sit 10 minutes.
- 1 Tbs. vanilla extract
- 2 Tbs. maple syrup
- ¾ cup unsweetened applesauce
- ½ cup chopped walnuts
- ½ cup Enjoy Life mini chocolate chips
Instructions
- In large bowl mix dry ingredients.
- In smaller bowl mix wet ingredients.
- Add wet to dry and stir.
- Add walnuts and chocolate chips, stir.
- Grease muffin tins with coconut oil.
- Spoon into muffin tins.
- Sprinkle with gluten free oats.
- Bake 20-30 minutes.
