Coconut Macaroons, are in the works today, can you tell I love coconut and all things made with coconut? Seems like every time I turn around I am making something that has some shape or form of coconut in it. Coconut oil, coconut butter, shredded coconut, coconut fat, coconut milk, you get the message, right? Well add something lemon to the coconut and wow, I think my taste buds have gone to heaven. That’s where Coconut Macaroons with Vegan Lemon Curd come in.
Have you tried my Vegan Lemon Curd yet? You will need to make it for these coconut macaroons. The great thing about it being vegan is, it’s dairy and egg free. I don’t have a big problem with eggs, but for me I don’t like them in lemon curd. The Lemon Curd is free of refined sugar, has protein and healthy fat. Once you’ve tried it you will never go back to eating the processed lemon curd that comes in a jar. Coconut Butter, is also needed, it’s super simple and you will need it first for the coconut macaroons and second for the vegan lemon curd.
Coconut, no matter what the form, is so good for you,
loaded with calcium, potassium and magnesium, and also plenty of electrolytes.
It’s great for the immune system and the oil does wonders for your skin.
I use it as my daily moisturizer.
