Grain Free Banana Bread is everything from a breakfast food, to a snack to a dessert. Choose to eat it any time you like, just make sure you choose to make and eat it. You won’t miss the grains, you won’t miss the dairy and you will love the flavor. I made this over the past month I can’t tell you how many times because every time I made it, it quickly disappeared, and then came the requests for more. Don’t you love it when your family asks you to make one of their favorite recipes. That means you did good and they like your cooking or baking or both!
I look at cooking and baking as my love language, it’s they way I show or express my love to those near and dear to my heart? This time of year I’m showing and sharing a lot of love, because I’ve been baking up a storm with this Grain Free Banana Bread. I’m choosing to give it as some gifts this year. Some people make jams and jellies, some make sugar-coated nuts, well I’m a nut bread giving kinda gal. Last year I gave apple bread, the year before that pumpkin. Now the people I make it for have come to expect it and I think I have created some bread loving monsters. This year I was thinking of possibly not giving it as gifts and quickly found out that was not in option, from a few of those I give it to. That’s ok though, I love making it and I’d much rather give food gifts I make than buying a gift card.

I know giving handmade gifts might be a little more time-consuming than buying a gift, but just think, the person on the receiving end will be able to enjoy the time and energy you put into it with every bite they take. Make it a family affair and spend a Saturday in the kitchen whipping up some Grain Free Banana Bread for those you give to this year, or just make some and share it at work or at a get together. It’s not hard and trust me they will love it!
Ingredients
- 1 1/2 cups almond flour
- 1/2 cup coconut flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder gluten free
- 1 teaspoon salt
- 2 tablespoons flax meal
- 1 teaspoon cinnamon
- 4 eggs
- 1/3 cup coconut oil melted
- 1/2 cup coconut milk
- 2 mashed ripe bananas
- 1 1/2 teaspoon vanilla
- 1/2 teaspoon almond extract
- 1/3 cup honey
- 1 cup walnuts toasted roughly chopped
- 3/4 cup chocolate chips-gluten free. dairy free-Enjoy life chocolate chips
Instructions
- Preheat oven to 350 degrees, grease 1 loaf pan.
- In free standing mixer combine the first 7 dry ingredients, mix.
- In medium bowl whisk eggs.
- Add coconut oil, milk, bananas, vanilla, almond extract and honey, stir until combined.
- Add wet ingredients to dry ingredients, mix until combined.
- Add walnuts and chocolate chips.
- Scoop into greased pan.
- Bake at 350 degrees for 45-60 minutes, or until inserted knife comes out clean.
