The temperature is chilly outside, so it’s a soup kind of day. How about some Curried Pumpkin Apple Soup? I know you might wonder about this combination, trust me, it’s merger of flavors makes it a fabulous fall festival in one crock pot. That’s another great thing about it, crock pot’s are efficient and a great babysitter of your meals, make it and leave it for the day, and dinner is ready when you get home. There’s nothing like not having to make dinner after a long day at work, or a long day out playing with the family.
Our household has been busy, recently we traveled to Colorado to attend my nephew’s wedding. It was a great time of year to visit my home state, there was still some golden color attached to the trees, intermingled with some red’s and yellow’s. My nephew is a cowboy, he works on a cattle ranch up near Aspen, Colorado. He married his cute little adorable Texan cowgirl. They did an amazing job putting their wedding together, of course it had a western theme, the reception was held in a barn, and we were transported by hayride to and from the ceremony, it was all amazing.
It was a blast of a weekend, we rented a large 5 bedroom house, where my brother, sister and their spouses and our parents and some nieces all stayed during all the festivities. The view from this house was amazing and the kitchen, well lets just say I was having a little kitchen envy over the weekend. It was big and spacious, lots of counter space and even with 8 people hustling around making the rehearsal dinner it wasn’t crowded. Having us all in one house was great as it catered to lots of togetherness and fun family time.
The wedding ceremony and reception went off without a hitch and not a lot of drama as you can find at plenty of family gatherings. The weather was spectacular, sunshine and warm temperatures abounded. It snowed the first day of our trip and the last day with a beautiful 9 days of sun shining down in between. Such a great time with everyone.

Ingredients
- 1 tablespoon coconut oil
- 1 medium onion chopped
- 4 cloves garlic minced
- 3 stalks celery finely chopped
- 3 apples peeled, cored and chopped
- 1 tablespoon curry
- 1/2 teaspoon ginger
- 1 teaspoon cumin
- 1/2 teaspoon thyme
- 1/2 teaspoon black pepper
- 1 teaspoon herbamere
- 4 cups of vegetable broth
- 1 1/2 cups pumpkin puree
- 1 can coconut milk
- 1 1/2 cups cooked garbanzo beans
- 1/2 cup pumpkin seeds toasted
- Cilantro for garnishing
Instructions
- In skillet with coconut oil, saute onions, garlic, celery and apples for 5-8 minutes until onions become translucent.
- Add spices, and stir, cook for 1 minute.
- Add vegetable broth, stir and cook for 1 minute.
- Pour skillet mixture into crock pot.
- Add pumpkin, coconut milk, and garbanzo beans, whisk until mixed.
- Cover and cook on low for 6-8 hours.
- Garnish with cilantro and toasted pumpkin seeds.
