The other day while I was making some Gluten free Pumpkin Flax Granola it was so nice to be able to look out the window and see our chickens. At our old homestead we couldn’t see them from the house and they didn’t have much area to free range. At our new homestead the chickens are visible from just about every window of the house and it’s fun to be able to watch them and their antics. Scratching, running, strutting, etc. The hens are loving their new digs here at Meadows End Ranch, plenty of room to roam and plenty of bugs to eat. They definitely entertain us. The chickens like playing outside for as long as there is light, which at this time of year is only for about eight hours a day, it’s dark by 4:00-4:30. The chickens have adjusted to their new life at Meadows End Ranch and for the most part we are getting an average of about 15 eggs a day, which is down from the 24 we were getting this summer but it is winter so we let their bodies take a break and choose not to give them any artificial light. I mean how would you feel if you gave birth everyday, you would need a break too.
Gluten Free Pumpkin Flax Granola is a nice addition to our breakfast choices here at the homestead. Many mornings we are eating Apple Spice Oatmeal and some farm fresh eggs from the hen house, but there are some mornings where we need something quick and no cooking involved. I usually try and whip up a Cacao Smoothie when I’m in a hurry and even when I’m not, smoothies are one of my favorite meals. Mr. TUH though, doesn’t care much for smoothies so he was the one I developed this recipe for.
I really have a hard time buying the cereal in a box, even if it’s organic and gluten free. The box cereals besides being processed, usually contain a fair amount of sugar. When I looked at the ingredients of the current dry cereal he was eating once in a while, sure enough, cane sugar was the second ingredient and the other main ingredient was Oats. I was sure I could do better than that, more than oats and some flaxseed.
I keep a fair amount of nuts, seeds and coconut on hand because there are so many snacks and such you can make when you keep these ingredients in your pantry or freezer, like Grain Free Cacao Granola Bars. Just last weekend we were invited to a Christmas party of which we were to bring a white elephant gift to exchange. In the past I’ve made other cookies and put them into a Christmas cookie jar and used that for my white elephant gift, so this year I made Grain Free Cacao Granola Bars and they were a hit. It’s with many of these same nuts and seeds that I combined into Gluten Free Pumpkin Flax Granola.
This particular batch of Gluten Free Pumpkin Flax Granola was ground a little finer than most might like it. You can leave it chunky or grind it fine, whichever you prefer. Gluten Free Pumpkin Flax Granola recipe is another great example of some ingredients to stock your pantry with and take another step to eating healthier.
Ingredients
- 3 cups oats
- 1/2 cup pumpkin seeds
- 1/2 cup dried shredded coconut
- 1/2 cup flax seeds
- 1 cup sunflower seeds
- 1 cup walnuts
- 1 tablespoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 cup coconut oil melted
- 3/4 cup honey
- 1 teaspoon vanilla
- 1/4 teaspoon almond extract
Instructions
- Preheat oven to 350 degrees.
- In small sauce pan melt coconut oil, and honey together, when melted add vanilla and almond.
- In food processor add first nine ingredients.
- While food processor is running add coconut oil honey mixture. Process just until mixed.
- Spread mixture onto cookie sheet and bake for 20 minutes, stirring half way through cooking.
- Remove from oven and break apart with a fork.
- Store in refrigerator.

We used to live in western Washington state on a five acre homestead and we just recently moved to 40 acres in Northern Idaho. I hope you find time to try some of the recipes.
