Today I’m recovering from an incredible day we had yesterday, and still dreaming of these No Bake Key Lime Coconut bars. They are dreamy tasting themselves, but they are also all gone, so until I make more it will have to be in my dreams.
Yesterday we went to the wedding of our friends daughter. It was an amazing day, filled with so much fun, love, and good friends, and a lot of work. Like us, our friends decided to hold the reception in their yard. Like us, I guess they are a little bit crazy. I mean having a wedding reception or any large event in your home and yard takes an amazing amount of work to get the yard up to tip-top shape. We’re talking, 20 hanging baskets, fresh bark, lawn, shrubs, decks, all brought up to immaculate condition. Then we’re talking, watering everything every day until the wedding day. Do you get the picture? This is a crazy amount of work, I know because I did the same thing in my yard not once, but twice. What we won’t do for our kids. Anyway it was fun to help our friends out with all the work and enjoy in all the fun and festivities.
Between the photo booth, dance floor and all the food everyone had a great time.
Instead of having a wedding cake they decided to have a table full of desserts, all recipes of which the bride had picked out and had pinned on a Pinterest board. I thought that was a great way to let us know what she wanted.
I looked at her board and thought, okay, that all looks great. The creative side of me said, what can I make that will fit in with these other desserts or is similar but make it gluten, dairy, and refined sugar-free.
The bride also wanted to bring one of her wedding colors, green into the dessert if possible. That’s where key lime came to mind and I created these key lime coconut bars.
Let me just say, they are heavenly. As my friend said, slightly tart but refreshing and not too sweet. They held together awesome despite having to sit outside in warm weather, although that day wasn’t too warm to start with but at the peak of the reception the sun got pretty intense. The desserts were under a tent and fared quite nicely.
I was pleased to see that key lime coconut bars were one of the many desserts to get completely wiped out, I guess others thought they weren’t so bad either.
What I really wanted to do was get up and share with everyone how these key lime coconut bars weren’t only good, they were fabulous, better for you because of all the whole food, unprocessed ingredients, they are made from.
I guess when everyone was toasting the bride and groom I could have got up there and said a few nice words about them and then “oh and I just wanted to share that the Key Lime Coconut bars not only taste great, but they are full of nutritious ingredients that aren’t full of empty calories.” But I behaved myself and stayed seated.
