I love to cook and I think I love it even more in the Fall. Golden Garlic Potatoes are just one of the recipes that I think spells F-A-L-L. Besides being so smooth and full of flavor, and just darn good comfort food, they’re so much better for you than just the average white mashed potatoes. Golden Garlic Potatoes immediately make me think of Thanksgiving and I’m reserving a spot on the Thanksgiving Table for these this year, along with some Grain free Dairy Free Pumpkin Cheesecake. My older son tells me he wants to be part of planning and preparing the menu for Thanksgiving this year so not sure what else will be served on November 28th.
Another thing I love about Thanksgiving is a full table. I’m not talking about food here, although that’s important too, and I’m sure I will get around to filling the table, I’m talking about people. My theory is the more the merrier. I love having a table surrounded by friends and family. I grew up in a large extended family. My Mom is one of twelve kids and add to that, spouses and kids, most years there were 50 plus people for Thanksgiving, which to me just made it all that much more fun. One of my jobs as a kid was to make all the place setting name cards, I would get all fancy and put a nice little turkey or pumpkin sticker on each one, haha, memories, good stuff.
Golden Garlic Potatoes, aren’t your typical Thanksgiving mashed potatoes, they are a mashed potatoes changed up. Between the butternut squash, steamed with the potatoes and whipped to goodness with just a little non-dairy milk, accented with some amazing roasted garlic, you will be going back for seconds and so will your guests, so you better make plenty of them. What do you serve at your Thanksgiving dinner, do you keep it small and simple or invite everyone and their dog and put on a huge spread? Whatever you do make sure and include these Golden Garlic Potatoes, whether it’s big or small.
Ingredients
- 1/2 butternut squash, peeled, seeded and chopped
- 4 medium potatoes, peeled and chopped
- 2 garlic bulbs roasted
- 1/2 cup non dairy milk
- 1 teaspoon Herbamere
- 1/2 teaspoon black pepper
Instructions
- Steam butternut squash and potatoes for 15-20 minutes or until tender.
- Drain and place in mixing bowl.
- Add garlic, milk, Herbamere and pepper.
- Mix using hand mixer, until nice and fluffy.
