Cashew Onion Cream is a rich velvety cream that isn’t just empty calories, like so many condiments are. Obviously made from Cashews, a nut, yes, but not just any old nut. Cashews have so much going for them. Going in a plethora of my recipes is what they have going for them.
Seriously though they have a lower fat content of any other nut. Remember, it’s a healthy fat. Cashews are not only good for cardiovascular health, and coronary heart disease, but diabetes too. They are high in copper and magnesium which helps build strong bones and connective tissue. Don’t be afraid to indulge your sweet tooth and use them in recipes like No Bake Key Lime Coconut Bars, or Vegan Lemon Curd.
Cashew Onion Cream, an ivory colored condiment was inspired by a little gluten-free vegan organic cafe in Seattle called Thrive. One of my favorite places to go when visiting Seattle. It’s nice to be able to eat out and enjoy virtually anything off their menu, and no I don’t benefit from promoting this cafe, just throughly enjoy good fresh real food. Since Seattle is a fair distance away, I wanted to be able to enjoy this sauce on some of my own dishes, thus the recipe testing began.
Generally this cream is on the thick side as far as creams go, but it can be very versatile and be used as a sauce or dressing simply by thinning it out a little with more non-dairy milk of your choice. The next time I make my Stuffed Portobello Mushrooms you can bet there’s going to be a dollop of Cashew Onion Cream on top. Don’t be afraid to use it on a dish that might usually call for a scoop of sour cream on top. Get creative and garnish that next baked potato with the cream and a sprinkle of chopped chives. I used it as a dressing on a taco style salad I devoured. The options are limitless, just use your imagination a little and don’t get stuck in a rut. Eating fresh real food and spicing your dishes up a little with this Cashew Onion Cream or a dab of Kale Basil Pesto will excite your taste buds.
I get my organic cashews from Azure Standard, if you live in their delivery area you need to know about them. Again I don’t benefit from plugging Azure Standard, I just know how much I value getting organic products from them and want you to know too! They have a wide variety of gluten free items, and countless other products. It’s hard not to get carried away when placing my order and it feels like Christmas when I get my delivery.

Ingredients
- 1 medium Onion, chopped
- 1 cup Cashews soaked 1 or more hours
- 3 Tablespoons Apple cider Vinegar
- 2 Tablespoons freshly squeezed Lemon juice
- 1/4-1/2 cup non-dairy milk,(I used coconut milk) depending how thick or thin you want your cream.
- Pinch of Salt
Instructions
- Place all ingredients in Vitamix, food processor, or other high powered blender. Blend until nice and creamy.
- Add more milk to thin.
Notes
Soaking of Cashews isn't mandatory, just makes for a creamier sauce. I keep a pint jar of cashews soaking in the refrigerator on a regular basis, so they're ready when I need them.
