I’m always trying to think of recipes to make that include rhubarb this time of year, and that’s how Strawberry Rhubarb Blast came to be, because it’s Rhubarb season baby!!! I just love the refreshing taste of the strawberries and the tartness of the rhubarb. This year I’m thinking of ways to use rhubarb that isn’t necessarily a dessert loaded with sugar, although I’m sure there will be some of those too. I mean everyone needs to have a little Rhubarb Coffee Cake once in a while right? Meanwhile trying to be creative without so much sugar, so I put my creative juices into this Strawberry Rhubarb Blast.
Besides loving the combo of strawberry and rhubarb, and these two balancing out each other, it was exciting to use not only my first stalks of rhubarb of the season but my first anything from the garden this year. Sad to say I don’t have any strawberries yet. I don’t even have any strawberry plants right now. Two Springs ago we decided it was time to yank the existing strawberry plants we had, they were very old and we didn’t get that much off of them, and we have not replaced them as of yet. Not growing strawberries in the Washington State is almost against the gardening laws of nature, I just might have to do something about my lack of strawberry plants.
Did you know that rhubarb is the vegetable with the least amount of calories? If you are counting them then you might just want to indulge in a little rhubarb. Rhubarb is also full of fiber, anti-oxidants, minerals and many vitamins like B6, A and K. I love eating clean real food. Grow your own food and you won’t believe the benefits that you receive from it. Any one need a rhubarb plant?
