Lemon and basil,(yes, here I go again with more lemon) are a nice fresh pairing in this Lemon Basil Dressing. The freshness of the lemon and the aroma of the basil made this an instant hit at our family dinner while my sister was visiting. Nothing like a new salad dressing to make a large bowl of greens come alive, or over a Summer Vegetable Medley, which became our salad on a nice warm summer evening.
This has been an extremely busy June, July and August, a great time of making memories too. Every summer My sister comes and visits me for a week, gotta get that sister time in. She is a kindergarten teacher, and it takes a special person to be a teacher no matter what the grade, but I already knew she was special, now 20 little five-year olds do too. Sister time is rejuvenating and fills up my heart until we see each other again, she lives in Colorado so our visits aren’t all that frequent. It is awesome when she’s here because we always find somewhere new and different to explore. This year we took a few days to explore Long Beach, Washington.
We took along some easy food to prepare in the little beach cottage we rented like my Potato Kale Hash, and Basil Fried Rice. I love sharing my recipes with my sister, she’s a great recipe tester too. We explored the beach and just enjoyed some down time. Long Beach is known for the fact that you can drive on the beach,(of which we quickly decided not to do after getting stuck) or basically use any mode of transportation that you like, to go down the beach.
We saw a little bit of everything that day, despite that fact that it was chilly, it was a great day for people watching, reading a good book and putting our toes in the sand. Yes, we were wearing jeans and light jackets, that’s the way we roll in the Pacific Northwest, but at least we got to get away for a couple of days.
When we got home, we had our work cut out for us, we had plenty to pick in the garden and make into meals or freeze. We made a huge bowl of Summer Vegetable medley and this tangy Lemon Basil Dressing to go over it.

Ingredients
- 3 Tbs freshly squeezed lemon juice (don't use the bottled stuff)
- 2 cloves of garlic
- 3/4 cup olive oil
- 1 cup fresh basil leaves
- 2 tsp dijon mustard
- 2 tsp maple syrup
- 1/4 salt
- 1/4 pepper
Instructions
- Combine all ingredients in a high powered blender and blend till smooth.
- Use as desired.
