Lemon Cashew Snack Balls are a sweet treat without any added sugar. Do you have a sweet tooth? I know I do, even though I’m getting that under control, it’s still nice to have something now and then that feels and tastes like a sweet treat but really is healthy and nutritious. We play with our own minds sometimes, by trying to trick them into thinking that what we are eating is really good for us when really there are better alternatives. For example, some think by buying fat-free snacks packaged in a box that they are snacking on something that is healthy because it is fat-free, when in reality when companies take out the fat they are usually adding in more sugar. Well if you know me by now, you know I’m always advocating for people to eat outside of the box for more reasons than just the fat-free and adding more sugar bit.
Of course I encourage you to eat outside of the box because of the preservatives that are in the packaged stuff. I mean when is the last time you added sodium benzoate or sodium nitrate to a recipe you were making? Are you sweetening your recipes with aspartame or sprinkling a little red or yellow food dye on your food?
Lemon Cashew Snack Balls make a great evening snack when your stomach might just be getting the grumbles. You won’t need many, just one or two.
Ingredients
- 1 cup cashews soaked
- 2 Tablespoons freshly squeezed lemon juice
- 1 Tablespoon chia seeds
- 1 tablespoon coconut oil
- 1 cup cashews Not Soaked
- 1 cup coconut
- Zest from 1/2 lemon
- 2 drops stevia leaf concentrate
- 1/2 cup coconut for rolling balls in
Instructions
- In very small bowl combine chia seeds and lemon juice. Let sit for 10 minutes.
- In Vitamix or food processor place soaked cashews, chia seed mixture, and coconut oil, blend till it becomes a pasty mixture, like a nut butter.
- Scoop out into small bowl and set aside.
- In clean food processor add your dry cashews, pulse into small pieces.
- Add coconut, lemon zest and pulse 1-2 times.
- Add cashew chia mixture, and stevia and blend until combined, scraping sides if necessary.
- Scoop out and roll into balls.
- Roll in loose coconut, and eat.
- Store in refrigerator.
