Trail Mix Energy Balls should be just the ticket for my next trip coming up. Do you find yourself eating more when you’re on a trip? I always tell myself I’m not going to and then, you know, the inevitable happens. Whomever you might be visiting, puts a giant piece of something or other before you and you eat. You sit down at a restaurant and look at the menu and order, it’s more than you would eat at home, but gosh you are paying for it so you better eat it. You have snacks in the car and you eat, while watching the scenery pass by. I’m not sure where I’m going with this, but I’m going on a trip and I’m trying to be prepared. Prepared, not only to not eat too much, but also not eat the wrong things. When I’m eating outside my home with other than my immediate family it’s so easy to fudge a little on my way of eating. I did that on my last trip, indulged in dairy and paid the price. I’m not going to do that this time. I’m trying to go prepared, but I’m running out of time, so I’m trying to tell myself , don’t stress, Whole Foods is across the street. Literally, my parents live that close to one. So I just plan to go grocery shopping upon arrival. I’m making a list and checking it twice. It’s not a lot of fun to cook while on vacation, but I feel that’s what I need to do this time. Besides my diet restrictions I just got thrown a curve ball and now my husband is on an even stricter diet then mine and he can’t eat most of what I eat. What does that mean for this lady? Well I’m not quite sure, for now it means I try not to stress, and remind myself I’m always up for a good cooking challenge. I just didn’t know that part of that challenge was going to be cooking two separate meals for every meal. Besides that, where we’re going seems to be a whole different style of eating. It’s going to be probably my biggest challenge ever regarding traveling and eating. What challenges have you found with your diet while traveling? How do you prepare for eating away from home? These trail mix energy balls are part of my preparedness, except now my husband can’t eat nuts, so guess I will be eating these all myself. So much for not over eating.
Ingredients
- 3 cups walnuts
- 1/4 teaspoon Himalayan salt
- 1 teaspoon cinnamon
- 1/2 cup almonds
- 1/2 cup Sunflower seeds
- 1/2 cup Pumpkin seeds
- 1/2 cup Cashews
- 1/4 hemp hearts
- 3/4 cup dried coconut
- 1/4 teaspoon almond extract
- 1 teaspoon vanilla
- 6 medjool dates, pitted and soaked in warm water for 15 minutes to overnight.
- 1 Tablespoon chia seeds
- 1/4 cup dried coconut
Instructions
- Soak dates in warm water.
- In food processor add walnuts, salt, and cinnamon, blend until they become walnut butter.
- Scrape out and set aside.
- In food processor add almonds, pulse until roughly broken up, add sunflower seeds, pumpkin seeds, and cashews. Pulse until you like how small the pieces are.
- Add the remaining ingredients,through chia seeds, pulse until combined.
- Add back in walnut butter and pulse again until combined.
- Scoop out and roll into balls.
- Roll around in dried coconut.
- Store in refrigerator.
