One pot pasta might not be new to many of you but I still wanted to share my version of this super simple recipe. Who doesn’t enjoy a good hearty meal that’s fast and easy to get on the table and looks amazing too. Add to that is the bonus that it only takes one pot, a cutting board and maybe a serving dish if you’re feeling fancy, thus resulting in very few dishes to wash.
I’ve always loved my spaghetti more when it’s a day or to old and the flavors have melded together and this recipe tends to lean that direction, the pasta and sauce is laced together beautifully. I love a good spaghetti sauce that’s loaded with vegetables like in my Chunky vegetable spaghetti sauce, so this recipe too is full of fresh herbs and vegetables. I can hardly wait to get my basil seeds planted and be on the road having fresh herbs and vegetables growing in the garden.
Making One pot pasta will help you have an amazing aromatic meal set before your family, significant other or all to yourself in probably 30 short minutes. From nothing to spectacular in no time flat. That is of course if you have no interruptions, unlike me who had to let the dog out every five minutes and then back in again, bless his 15-year-old bladder I mean body. Maybe you have the kids tugging at you, enlist their help chopping vegetables or you can even chop the vegetables the night before and throw it all in one pot the next night, easy peasy. Chop a few extra of the same vegetables and toss them in a bowl of greens and bam dinner is a go, except for popping that cork on the bottle of wine. So get chopping and enjoy a one pot pasta dinner.
Ingredients
- 4 1/2 cups of water
- 1 6 oz can tomato paste
- 1 medium red onion sliced and halved
- 1 medium zucchini peeled and greated
- 1 small container of cherry or grape tomatoes halved
- 1/2 cup chopped parsley
- 2 cups of fresh spinach
- 4-5 cloves garlic sliced
- 1 red pepper seeded and chopped
- 3 large stems of fresh basil chopped
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon sea salt
- 2 tablespoons olive oil
- 1 12 oz. package of gluten free Jovial spaghetti noodles
Instructions
- Add water to large deep pan and stir in tomato paste.
- Add rest of ingredients and lightly stir.
- Bring to a boil for 10-12 minutes, stir until noodles are done and water is gone.
- Stir and serve.
