Vegetarian Olive Tapenade is a unique dish but oh so full of flavor and gives us all a break from the traditional dips. Great for parties and BBQ ‘s, it gives your guests something new to try. I love to bring non traditional dishes to parties, rather than the standard dishes that make appearances at every get together. It’s great when people digging into your dish react with the wow effect, even better when you get asked for the recipe.
This particular time we weren’t going to any party, we needed some snacks for a road trip. We wanted something tasty and would make us feel like we weren’t missing out on anything as we passed by all the fast food establishments. Although I don’t really feel like I’m missing out on anything from those except high processed foods, high bad fats and empty calories with little to no nutrition. I guess what I’m missing is the convenience of pulling off an exit and zipping through the drive thru. With a little extra planning I can have a cooler full of unprocessed nutrient dense food that will provide my body with great nutrition and calories that mean something. Olives are high in phytonutrients (that’s a good thing) and a great source of Vitamin E.
The savoriness of this combination of olives, capers, artichokes, red peppers and garlic can be enjoyed by serving it as a dip, spread on a slice of freshly baked bread or top a salad, or potato or just eat by the spoonful, hey why not?

Vegetarian Olive Tapenade
Ingredients
- 2 Tablespoons capers, rinsed
- 1 cup Kalamata olives, chopped
- 1 cup green olives, chopped
- 1 cup black olives, chopped
- 3 cloves of garlic, minced
- 1/2 cup artichokes, chopped
- 1/2 cup roasted red peppers, chopped
- 2 Tablespoons freshly squeezed lemon juice
- 3 Tablespoons olive oil
- 1 teaspoons fresh Thyme, chopped
- 1 teaspoons fresh oregano, chopped
Instructions
- After chopping the ingredients it's as simple as combining it all and stirring it together.
