With warm weather sticking around now, it’s salad time! It’s Asian Cabbage Salad time! For some, warm weather might mean barbecuing and others it might mean, cold meals are on the menu, for me it means salads! I can’t get enough of the freshness that salads have to offer this time of year, sometimes you might even find me eating a salad for breakfast. Besides the healthiness that most salads bring to the table, the flavors that can be brought forth by combining all the fresh produce that abounds, you can’t go wrong. This is where Asian Cabbage Salad is at, fresh! The crunch of the cabbage and cashews, the tang of the cilantro and green onions, the flavors of the lime juice and sesame oil, bring it all together.
What do you like to bring to your summer get together? Salads, desserts, fruit? I still can’t believe that Memorial day has come and gone and June is here. School is almost out, graduation’s are about to happen, vacation’s are being planned. Yet whether it’s one of these events or just a dinner for the family, all usually include food, and Asian Cabbage Salad or Vegetarian Olive Tapenade or even Grain Free Cacao Granola Bars can be part of this.
I planted cabbage in my garden this year so I’m excited to see what it produces and dream of the salads and stir fry we can devour. Get out and enjoy that sunshine, spend time with friends and family and don’t forget to spend a little time in the kitchen making up some awesome dishes for those potlucks, picnics or barbecues’ you might be attending. Don’t you just love this time of year? You won’t get stuck in the kitchen for to long making Asian Cabbage Salad for a meal. You’ll have time left over to enjoy the fun of the season. Ingredients
- 2 cups green cabbage thinly sliced
- 1/2 red bell pepper julienned
- 1 small zucchini grated
- 1/2 avocado sliced
- 1/2 small cucumber peeled, quartered and sliced thinly
- 2 scallions sliced
- 1/4 cup of cilantro stems removed
- 2 tablespoons cashews or pieces
- 1 cup of snow peas
- 1 tablespoon sesame seeds toasted
- juice from one lime
- 2 Tablespoons sesame oil
Instructions
- Layer ingredients on to each individual plate or toss together in large bowl.
- Drizzle with lime juice and sesame oil and toss.
