Balsamic Roasted Vegetables aren’t just your average vegetables. They’re roasted vegetables all jazzed up and ready to make a splashing debut at your dinner party. I mean who needs average when they can have awesome? We all love our veggies but living it up once in a while never hurts anyone, Right? You can only eat steamed green beans, or plain old broccoli so often. Yes, green beans and broccoli might be quicker, but Balsamic Roasted Vegetables will be an instant hit at your table. There will be no moaning about boring old vegetables tonight.
The cremini mushrooms, fresh red peppers and golden beets, will have your taste buds dancing with glee. The zippy turnips, brussels sprouts and slightly sweet apples will add just the right flavors to finish off this dance party in your mouth. Besides all the partying going on in your mouth, you will be giving your body lots of nutrients with all these tasty vegetables.
Cremini mushrooms are known to help with inflammation and even reduce your risk of breast cancer. You will be supplied with calcium, potassium, and fiber from the golden beets. Brussel sprouts provide us with vitamin K, which help with bone and blood health. Also vitamin C which offers protection from free radicals and promotes brain health. So with just these three ingredients you’re getting so many nutrients. Besides apples, turnips and red peppers bring amazing nutrients to the table too.

I hope that you will choose to try your hand at making Balsamic Roasted Vegetables. You can’t go wrong with pairing up a variety, root, cruciferous, fungi, fruit, and nightshade vegetables. Roasting these vegetables are one of my favorite ways to prepare this combination. The balsamic dressing added some zest to bring the party from the oven to the table.
Ingredients
- 1/2 cup balsamic vinegar
- 1/3 cup organic extra virgin olive oil
- 2 tablespoons spicy whole grain mustard
- 1 tablespoon maple syrup
- 1 teaspoon dried basil
- 1 turnip peeled and chopped small
- 1 red apple chopped, cameo, gala.
- 3 golden beets trimmed and chopped small
- 1 red pepper seeded and chopped
- 1/2 lb Brussels sprouts trimmed and halved
- 1/4 lb mushrooms quartered
Instructions
- Preheat oven to 425 degrees. Line baking sheet with parchment paper.
- Mix all ingredients together, and set aside.
- Combine all vegetables in large bowl with a lid.
- Add dressing and stir or put lid on and shake.
- Spread vegetables onto baking sheet.
- Place in oven and bake for 25-35 minutes or until vegetables are tender.
