Well the holiday’s are almost done, Do I hear a big Whew! After next Wednesday we can all get back to our normal life, whatever that is. Are you going to a party on New Year’s Eve, or just curling up on the couch, your bag of crackers and watching the action in Times Square? Either way you choose to celebrate, Artichoke Spinach Dip is the dip you need, bring it to the party or enjoy it all to yourself at home. Don’t limit it to just the holidays though, serve it up with some vegetables and crackers during those Sunday football games, or as an appetizer for your Friday night potluck. What’s your favorite dish to bring to a gathering?
Now I know you’re probably looking at the picture thinking it’s green! Yes it is, but don’t let that throw you for a loop. I know a lot of Artichoke Spinach Dips are more of a cream-colored dip with chunks of spinach and artichokes, well this one is just green, with spinach and artichokes throughout. Part of the spinach and artichokes are blended up with the base of the dip, thus we have more of a green dip verses a cream-colored dip, it works, it still tastes amazing. It’s just a little different. It is vegan and gluten-free too.
So get your cashews soaking for this dip, break out your blender, saute up the onions, garlic, add the spinach and you are half way done making this dip. Finish it up in your Vitamix or other blender and it’s ready to go. Although next time I will be making a double batch because it got consumed so quickly not everyone got some. Serve it up in the middle of a big platter of vegetables or bring along a bag of gluten-free chips or crackers to dip into it. Anyway you choose to serve the Artichoke Spinach Dip, there won’t be any leftovers I’m sure.
Ingredients
- 1/2 cup of cashews-soaked for 30 minutes to overnight
- 1/2 of medium white onion chopped
- 2 cloves of garlic minced
- 2 cups of fresh spinach-I prefer baby spinach
- 1 cup of artichoke hearts chopped
- 1 tablespoon of fresh lemon juice
- 1/2 teaspoon sea salt
Instructions
- Prior to starting this recipe put 1/2 cup of cashews into glass container and cover with hot water. Let sit for 30 minutes, or longer if you have the time.
- Saute the onions and garlic for 3-5 minutes in a little bit of vegetable broth or extra virgin olive oil.
- When the onions become translucent add spinach to the skillet.
- Put lid on skillet and let sit for 3-5 minutes, once spinach is wilted stir into onions and garlic.
- Remove from heat and set aside.
- Take the soaking cashews and drain all but a little bit of the soaking water.
- Pour them into blender and blend on high till creamy, add more water if necessary.
- Add half the artichokes and half the spinach mixture to the blender.
- Add lemon juice, blend.
- Scoop into bowl,Add the remaining spinach and artichokes and sea salt. Stir.
