Golden Beet Carrot Smoothie is another powerhouse smoothie that is nutrient dense. I have fallen in love, don’t tell my husband, with golden beets recently. They are so beautiful, how could you not? Their taste and texture is subtle and I like them better than the standard red beet. After putting them in my Coconut Curry Bowl, and in some of my randomly stir fried vegetable dishes I kept adding them to more and more meals. I discovered them at our local farmers market. It was a great discovery and one I wished I had landed upon a long time ago, golden beets, where have you been all my life?
I highly regret not knowing about these little beauties, and therefore not planting them in my garden last year. Let me tell you, in my planning for my 2014 garden plans, there is some prime garden real estate being allocated for golden beets, along with a zillion other crops too. I’m actually thinking of enlarging my garden again this year, more on that later.
Let’s discuss the nutrients of golden beets and why they make a great smoothie. Beets are a natural cleanser, riding your body of toxins along the way. They have a high mineral content, iron, potassium, magnesium, and phosphorus. Loaded with vitamins and fiber, you can eat the leafs too, in your smoothie or in a salad. Beets have anti-cancer benefits and are also anti-inflammatory. They are also strong in a variety of antioxidants and help with detox too. So do you see now why this is a powerhouse smoothie? Beets are just jam-packed with so many things that are good for us.
Besides the beets in this smoothie, are carrots and an orange, more beta carotene and some vitamin C as well with more fiber. The orange gives it a little tang and the lemon juice a little zing. Now I know this smoothie does not have any greens in this recipe, but don’t let that stop you from adding some spinach or kale, I will probably do that next time. Now you know what you can make for breakfast or a snack tomorrow.
*Although an avocado is pictured, I decided not to include it in the smoothie.
Ingredients
- 1 cup of filtered water
- 2 golden beets, sliced
- 1 carrot cut into 3 peices
- 2 celery stalks, cut into peices
- 1 orange, peeled and broken apart
- Juice from one lemon, freshly squeezed
- 1/2 cup of parsley-or just grab a handful
- 1 cup of ice
Instructions
- Combine all ingredients in vitamix or high powered blender.
- Blend and serve.

I’m a big fan of regular beets, especially in smoothies, but have never tried a golden beet before. Thanks for the heads-up. Will definitely be trying.
